Egg-less Lemon Mousse

This is an egg-less lemon mousse. Wanted to make a mousse, and wanted something with lemon.

Egg-less Lemon Mousse

Yield: Serves 4-6

Ingredients:

1 cup water
Juice of 2 lemons
Zest of 2 lemons
1/2 cup agave syrup
2 tbsp cornstarch (this had 4 and trust me it was too much!)
2 tbsp butter
2 cups heavy cream, whipped
2 tbsp agave

Preparation:

Combine the first 5 ingredients in a sauce pot and bring to a boil and allow it to thicken. Once it has thickened remove from heat and stir in butter. Allow to cool to room temperature or slightly colder.

Once it is near the desired temperature whip together heavy cream and agave until it reaches stiff peaks. Fold cream into the curd and chill.
