Chocolate Chip Peanut Butter Cookies

I wanted something as a snack for school that would be a little sweeter than just fruits or veggies, so I made this healthier lower glycemic version of peanut butter cookies. The recipe originally had unsweetened chocolate, however, that was rather bitter. Semi-sweet chocolate chips do have a bit more sugar, but the flavour is better.

Chocolate Chip Peanut Butter Cookies

Ingredients:

1 cup mini semi-sweet chocolate chips
1 cup butter
1 1/2 cups peanut butter
2/3 cups agave syrup
1 cup coconut sugar
2 cups white flour
1 cup whole wheat flour
2 eggs
2 tsp vanilla bean paste
2 tbsp chia seeds
1 tsp baking powder
1 1/2 tsp baking soda

Preparation:

Cream together the sugars, butter, peanut butter, and vanilla. Add eggs and mix. Add remaining ingredients and combine.

Bake at 350 degrees F for 10-12 minutes.
