Chocolate
and citrus (especially orange) is a flavour combination that I love, so a
muffin using those flavours was natural. It was going to happen
eventually, and here is the product of that experiment. These also freeze really well, and thaw really quickly.
Chocolate Citrus Protein Muffins
Yield: 23 muffins
Ingredients:
2 cups whole wheat flour
1 cup coconut sugar
1/2 cup unsweetened cocoa powder
1 cup chopped Terry's dark chocolate orange
2 tsp baking powder
1/2 tsp baking soda
4 tbsp chia seeds
1 cup chocolate protein powder
1/2 cup light buttermilk
1 cup greek yogurt
1 egg
3/4 cup orange juice
1/2 cup apple sauce
zest and juice of 1 lemon
2 tsp vanilla bean paste
Instructions:
Preheat oven to 375 degrees F. Combine dry ingredients in one bowl, and wet ingredients in the other. Mix each well, combine the two and mix until just incorporated.
Pour into lined muffin pans and bake for 23 minutes, or until a toothpick comes out clean.
