One day when I was sick and only
had an hour left until the nights SWTOR operations started, and needed
something easy on the stomach for dinner that was quick to make. This is
the end result. I would have used whole wheat pasta if I had some in
smaller noodle sizes. :(
Yield: Serves 4
Ingredients:
1 medium onion, small dice
2 tsp fresh ginger paste (grocery store produce section)
2 cloves minced garlic
1 tbsp Italian herb paste
Salt and pepper to taste (or Nature's Seasoning blend)
4 cups low sodium chicken broth
2 cups frozen California mix veg (or veggies of your choice)
1 cup dry pasta
1 large chicken breast, thawed, diced
1 tbsp garlic olive oil (or regular)
Instructions:
Heat olive oil in a pot on medium-high heat, sweat onions and garlic until translucent, add herbs and seasonings at this point. Add chicken and cook through. Add veggies and broth, bring to a boil before adding noodles. Turn temperature down to medium and let noodles cook. Serve once noodles and veggies are cooked/heated through.
