For those days when you want a muffin that is healthier, and contains both peanut butter and chocolate at the same time. These freeze really well, and better yet they thaw really quickly.
Dark Chocolate Peanut Butter Protein Muffins
Yield: 24 small muffins
Ingredients:
1 cup all purpose flour
1 cup whole wheat flour
1 tsp baking powder
1/4 tsp baking soda
1 cup light buttermilk
2 eggs
1 cup peanut butter
1/3 cup applesauce
1 cup chopped dark chocolate
2/3 cup coconut sugar
2 tbsp chia seeds
2 scoops vanilla protein powder
1 tsp vanilla bean paste
Instructions:

1/4 tsp baking soda

Instructions:
Preheat oven to 375 degrees F.
Combine dry ingredients in one bowl, and wet ingredients in a separate bowl. Combine wet and dry ingredients, mix until just incorporated, be careful not to over mix.
Pour into lined muffin pans and bake for 18 minutes, or until a toothpick comes out clean.
