I came up
with this recipe to add some fruit to the coconut curry chicken for a
lighter more refreshing touch. Normally I just put the mango right into
the curry, but this was a nice change.
Pineapple Mango Salsa
Ingredients:
1/3 large red onion, very fine dice
1/4 pineapple, very fine dice
1 atalfuo mango, very fine dice
1 tbsp cilantro, finely chopped
1 tbsp basil, finely chopped
1 tbsp parsley, finely chopped
Juice of 1 lemon
Procedure:
Prepare all ingredients, mix together in a bowl, let sit for a couple hours before serving. Mix once in a while. The key is having all ingredients (not including herbs) be as close to the same size as possible.
