Tex Mex Omelet with Italian Sausage

This is the same cooking method as the previous omelet recipe. One large batch to be lazy. I had egg whites left over from something that I had made the previous day, so they went into this instead of using all whole eggs, it is a combination.

Tex Mex Omelet

serves 3-4

Ingredients:


4 egg whites
3 whole eggs
1 tbsp milk
2 tbsp Clubhouse Tex Mex seasoning blend
1 red pepper, small dice
1 shallot, small dice
1 tbsp chili flavoured extra virgin olive oil
1 Italian sausage, skin removed
1 cup shredded taco and nacho cheese blend

Preparation:

Cook the Italian sausage, once fully cooked remove from pan. Heat extra virgin olive oil, add peppers and shallot, saute. Add sausage back into the pan ad add eggs. Switch to low heat, cover pan, and let cook until egg is fully cooked. Add cheese, cover pan again, once cheese is melted fold omelet, divide into desired number of portions, and serve.
